Last night our electricity went out for a while, so we got to watch only half of "Monsoon Wedding." Tonight I had to go to Curriculum Night at school, so we'll finish watching it tomorrow. So far I'm enjoying it! Last night I made this:
Chicken Smothered in Mushrooms
1/2 tsp salt
1/4 tsp pepper
2-3 lbs. chicken pieces
2 Tbsp olive oil
6 cups halved mushrooms (I used all cremini)
2 cups chopped onions
2 cloves garlic, presed
1 cup chicken broth
1/2 cup white wine
2 Tbsp chopped fresh basil
1 tsp crushed dried thyme (or 1 Tbsp chopped fresh, but I didn't have any)
Combine flour, salt, and pepper in a plastic bag. Add chicken pieces, a few at a time, shaking to coat. Heat oil in a 12" skillet over medium-high heat. Add chicken, skin side down; cook for 8 minutes, turning once. Remove chicken from skillet; set aside.
Add mushrooms, onions, and garlic to skillet. Cook for 4 minutes, stirring occasionally and scraping up any browned bits. Return chicken to skillet. Add broth, wine, basil, and thyme. Bring to a boil. Reduce heat and simmer, covered, for 25–30 minutes, or until chicken is done. Remove chicken; cover and keep warm.
Increase heat to medium; gently boil sauce, uncovered, for 5 minutes. Serve chicken and sauce with lots of crusty bread for dipping and mopping.
