This morning the kids and I returned the Mother's Day favor and barged in on a sleeping Andy with a breakfast try and lots of cards and pictures. The kids get such a kick out of this stuff!
This evening was the annual barbecue/pool kick-off party at the club, which we've never before attended, and it was a lot of fun. The weather wasn't terribly cooperative, so it was a bit too nippy for most parents to go in, but the kids loved it. The club supplied the drinks (including a very respectable sangria for us grown-ups) and families brought their own food to grill plus a potluck of either appetizers, sides, salads, or desserts depending on the letter of the alphabet for their name. I made a very yummy salsa and served it with big tortilla chips:
1/4 cup fresh lime juice
1/4 cup chopped fresh cilantro
2 Tbsp olive oil
4 tsp minced canned chipotles in adobo
1 Tbsp red wine vinegar
1 tsp cumin
2 15-oz. cans black beans, rinsed and drained
1.5 cups frozen corn kernels, thawed
1.5 cups chopped red onion
1.5 cups chopped tomatoes
1 cup chopped green bell pepper
1 large ripe avocado, halved, pitted, peeled, and diced
Whisk first 6 ingredients in large bowl. Stir in remaining ingredients. Season with salt and pepper.
