This cheese spread came together easily and was very nice—mild but still flavorful.
1/2 lb. jarlsberg (regular or reduced-fat) cheese, shredded (I used the Microplane.)
3/4 cup reduced-fat mayo
1 Tbsp minced red onion (I think next time I'll use just a little more.)
1 Tbsp chopped fresh parsley
Combine all ingredients in a medium bowl. Season with coarse salt and freshly ground pepper. Serve with crackers.

Thank for this easy recipe! We've been buying this spread at the store, however, my husband and I have wanted to make it fresh at home, as it's more economical that way. It also goes great with a chilled bottle of Chianti!
