Damn, that sounds tasty. And maybe my kids will try it -- they love coleslaw. I can add some "plain white rice" to the menu, and we'll be all set. I do love many of your recipes -- the one from yesterday reminds me, too, of childhood comfort food: to wit, my mother's Enchilada Pie. Very similar to your recipe, but uses corn tortillas (and, embarrassingly, Ye Olde Mexican Cheddar).

I made this last night and it was terrific! It even looked just like your photo. The whole family loved it.

I made this again tonight (gee, I can't believe it's been over 2 years since the last time). This time I grilled the pork medallions instead of using the skillet & they came out great! I didn't need to use any oil for cooking and no messy skillet to clean. Delicious!
