Last night we had an all-InSeason dinner: locally raised chicken (roasted in the oven with just olive oil, seasoned salt, and paprika), native corn, and Royal Burgundy heirloom beans. Huh, what was that last one? I didn't know either, so I was delighted to open the bag and find a few handfuls of dark purple beans:
After washing and trimming them, I discovered that inside, they're just as green as their more-familiar cousins:
But wait! When I lifted the lid to take a peek while they were steaming, here's what I saw:
It's magic! And, indeed, by the time they landed on my plate (with a little butter and salt added), they looked exactly like regular ol' green beans:
Oh, and they were yummy.


Those are some crazy beans! I've never heard of a veggie that changes color like that! I barely have time to make dinner. I don't know how you think to take photos of each step along the way. =)

I haven't tried this but I have been told that if you add an acid like lemon juice or vinegar to the water that the colour will hold. Might be worth trying if you find these beans again.
