I don't believe the lobster is much more than a large underwater insect, incapable of much in the way of suffering and surely not deserving of any special concern or protection. The real damage is to the psyche of the chef. If this method of preparation isn't actually traumatic for him or her, it is at least distasteful and probably unnecessary. For that reason alone I think a different way of dispatching the creatures should be found.
