Sometimes just cutting your veggies in a new way makes all the difference. Here I've used a peeler to cut long ribbons of zucchini and carrot, and sautéed them with leeks and thyme.

I don't know the last time I cooked with a leek. Oh yeah, potato leek soup, 1993. Sighhh.
