2. Tomorrow I will pick up the turkey*, green beans, and the last few miscellaneous items. I will also make all the stuffing and the plain gravy.
3. Wednesday I will brine and roast the turkey breast, then brine and begin to air-dry the whole turkey. Then I will roast half of the root veggies and cut up the other half.
4. Thursday I will roast the second half of the veggies, roast the whole turkey, reheat the turkey breast, make the real gravy, and steam the green beans.
5. I also have to think about the hors d'oeuvres, desserts, and other side dishes. Don't worry, everything is under control.
*I have a "small" group coming this year—17 instead of 26!—so I'm going to do one whole turkey plus one turkey breast, per Amy's suggestion.
I need to figure out how to do this stuff. My parents and MIL are getting too old.

Sounds like you are very organized despite that last item. I make everything the day before, including the turkey, except the mashed potatoes. The already-prepared sides get baked just before dinner, and the turkey gets carved and reheated in a bit of turkey broth. (We aren't the fancy types with the whole presentation at the table! Plus it is nice and moist.) I did it this way last year and it worked pretty well!
