Chicken and roast vegetables sounds great — there are tons of ways to do it, and some are a lot easier than this back-and-forth in the oven and waiting method. Is there a reason to make it so difficult? Sorry but I’m just lazier than you are, evidently.

What I loved about this recipe is that the delicious chicken drippings get all over the veggies—they tasted divine! I didn't find it to be much working/waiting at all.

Root veggies and chicken thighs? I'm there!! And perfect for these cold nights. I almost never remember to take a photo of the food until it's been half eaten. Oops!
