How's everyone doing? Status quo here, by which I mean we are still staying home and no one has gotten sick. Hope that's true for all of you, too! I am maybe the last person who doesn't personally know someone who has caught Covid-19 (yet).

Giant Chocolate Chip Cookie in a Skillet
2¼ cups all-purpose flour
1 teaspoon baking soda
1 teaspoon cornstarch
½ teaspoon salt
1½ sticks unsalted butter, at room temperature
1 cup packed light brown sugar
¼ cup white sugar
1 large egg plus 1 large egg yolk, both at room temperature
2 teaspoons vanilla extract
1½ cups semisweet or bittersweet chocolate chips
Vanilla ice cream, for serving (Julie made this too!)
Preheat the oven to 350°F. Lightly grease a 10-inch cast iron skillet.
In a mixing bowl, whisk together the flour, baking soda, cornstarch, and salt; set aside.
With an electric mixer, beat the butter on medium-high speed until smooth, about 30 seconds. Add both sugars and beat until smooth, 2 to 3 minutes. Add the egg, egg yolk, and vanilla, increase the speed to high, and beat until combined, about 1 minute. Scrape the sides and bottom of the bowl and beat again to incorporate.
Add the flour mixture and mix on low speed until combined. Stir in the chocolate chips. The dough will be soft and sticky.
Transfer the dough to the greased skillet and press it evenly into the bottom. Bake until the edges are lightly browned and set, 25 to 30 minutes (the middle will be slightly underbaked).
Let the giant cookie cool for 5 minutes. Top with ice cream and dig in! Ours lasted maybe 10 minutes.
That looks wonderful! I don't know anyone personally yet, but people I do know have relatives sick or dying of it. So, I'm sure it will come closer, although I don't want it to. :(

Ours wouldn't have lasted the 5-minute cooling period. LOL
We don't know anyone who is sick. As Margaret said, I'm sure that will change.

How yummy is that?!
Blondies used to be one of my favorite sweets to make -- very much like your recipe, but made in a rectangular pan and cut into squares. It's been a while since I made anything very sweet.

A great idea to cheer everyone up! I don't know of anyone sick, though we only had 2 deaths from it here on the Big Island. Lots more from the flu.
