The scallop recipe sounds delicious! Mmmm. I will definitely be on the lookout for fresh scallops.

Here is a lentil soup recipe that I recently discovered. It's so flavorful and also freezes well. https://cookieandkate.com/best-lentil-soup-recipe/ I leave out the kale/collard greens when I make it and I add a diced russet potato. Just mentioning so you know that it's a recipe that doesn't mind being switched up a bit to your liking or what is in your pantry. :)

I don't like the texture of scallops but I do love lentils. I've been doing more baking during the pandemic, but not much more cooking. It's not very motivating for one person. I've been mostly satisfied with my Safeway pick up.
